Heirloom pilsner malt and German wheat malt form a delicate base, with East Kent Goldings and Saaz adding measured hop character. Fermentation with the house mixed culture brings a dry, gently funky edge, while a further Saaz dry hop keeps the profile lifted and quietly complex. Serve cool with chèvre, roast chicken, charcuterie, grilled vegetables, mussels or fresh bread.
