Holyrood Distillery

Dried and tropical fruit lead the nose, with raisins, butterscotch, fresh cake, sticky toffee and a soft leather note. The palate is generous but balanced, layering caramel, vanilla, digestive biscuit and tablet over ginger spice and a light savoury salinity. Maturation in Oloroso and Pedro Ximénez casks, bourbon barrels and rum barriques gives the whisky both richness and lift. The finish is long and mouth-watering, carrying apple pie, red fruit and sweet spice. Serve neat or add water gradually.
