White fruit, floral and herbaceous aromas meet a silky, fresh palate with balanced acidity, light tannins and a slightly bitter finish. Made entirely from Airén, the wine ferments spontaneously with indigenous yeasts after a manual harvest. Skin contact lasts about four months in stainless steel, followed by two months in amphora. It is bottled by gravity without fining, filtration or added sulphites.

The wine is made from Tinto Velasco grown near Quero in La Mancha. The vineyard covers less than one hectare and contains vines about 150 years old on sandy, calcareous soils. Grapes are hand harvested and fermented with native yeasts.
