AboutElios
Elios was founded by Nicola Adamo and Guido Grillo, two friends from western Sicily who left consulting careers in 2015 to work the vineyards their families had farmed for years. Instead of selling the grapes, they began making wine under their own name.
Their vineyards lie around Alcamo, Camporeale and Monreale, planted with Sicilian varieties including Grillo, Catarratto, Zibibbo, Nero d’Avola and Nerello Mascalese. They farm organically and work with spontaneous fermentations and minimal intervention in the cellar.
Elios 2020 Modus Bibendi Rosso Nero d’Avola
Fresh red fruit appears with cherry, blackcurrant, liquorice, roasted almond and clove notes in this Italian red. The acidity is present, while the tannins are soft and delicate. Made entirely from Nero d’Avola, the wine contains thirteen and a half percent alcohol. The grapes are organically farmed in Sicily, and the wine is classified as natural.
Elios 2021 Modus Bibendi Grillo
Citrus and white flowers lead, with a light Mediterranean herbal note adding freshness and definition. The palate is dry, medium-bodied and balanced, carrying lemon, subtle spice and a gently saline edge into a clean finish. Bright and quietly textural, it works well with grilled fish, shellfish, fennel or fresh cheeses.
Elios 2021 Modus Bibendi Bianco Macerato
Burnished orange-gold in the glass, with candied fruit, apricot, orange peel and brown spice. The palate is structured and textural, its light skin tannin and gentle astringency balanced by lively acidity and a fresh herbal lift. Complex but approachable, it suits roast squash, spiced poultry, firm cheese or savoury grain dishes.
