AboutEl Maestro Sierra
El Maestro Sierra began in 1830, when master cooper José Antonio Sierra stepped beyond barrel-making to establish his own bodega in Jerez. His struggle to establish himself among Jerez’s powerful wine families is remembered on the label: a hare pursued by nobles. The hilltop cellar catches cool Poniente winds from the Atlantic.
Pilar Plá Pechovierto took charge in 1976, beginning a women-led chapter that continues with her daughter Carmen Borrego Plá and cellar master Ana Cabestrero. They tend the old soleras largely by hand, without electric pumps.
El Maestro Sierra Pedro Ximénez 375 mL
Sun-dried grapes yield a dense, sweet and silky fortified wine with exotic spice, red-fruit and caramel notes. Lively acidity keeps the richness lifted and almost refreshing. After pressing, the must is fortified to stop fermentation, clarified, fortified again and transferred to American-oak butts for oxidative ageing through the solera and criaderas system. Serve at room temperature with blue cheese.
El Maestro Sierra 15 Year Oloroso 375 mL
Hazelnut aromas and exotic spices accompany a richly textured, nutty profile. Made from Palomino, this dry fortified wine undergoes oxidative ageing in American oak butts. The base wine is fortified to eighteen percent alcohol. Ageing through a criaderas-and-solera system lasts fifteen years. The final wine contains nineteen percent alcohol and comes from Jerez de la Frontera.
