AboutDry Fly Distilling
Don Poffenroth and Kent Fleischmann founded Dry Fly Distilling in Spokane in 2007, inspired by their shared enthusiasm for fly fishing. The distillery built its range around Washington-grown grain, much of it from family farms within roughly 30 miles.
Production follows a grain-to-glass model: the team oversees mashing, fermentation, distillation and maturation. Wheat has been central to its whiskey-making from the beginning.

Oak and apple rise first, with a light citrus note keeping the aroma fresh. The palate moves through toasted wheat, toffee and butterscotch, then picks up cinnamon, honey and a peppery edge. The texture is rounded but not soft, preserving grain character through the centre. The finish is lively and warming, leaving buttered toast, spice and a clean trace of oak.
