Don Mateo

Roasted agave brings a smoky-sweet core, framed by herbaceous notes, wet earth and a distinctive mineral edge. Cupreata agave grown at altitude in Michoacán contributes a rugged, savoury profile, with pine, moss and red-clay tones adding detail around the smoke. The palate is firm and earthy rather than overtly sweet, carrying cooked agave and gentle heat into a long, mineral finish. Serve neat in a small glass and allow it a few minutes to open before sipping.
