Romain and Damien Bouchard created Domaine de l’Enclos in Chablis in 2015, drawing on nearly a century of family winegrowing. The 2016 harvest was their first made entirely at the estate. The brothers now work 36 hectares, including village, premier-cru and grand-cru Chablis vineyards.
The vineyards are certified organic. Grapes are harvested by hand, moved by gravity in the cellar and fermented with native yeasts. The wines generally spend twelve to eighteen months on their lees, in tank or barrel.
