AboutDomaine d'Aupilhac

Sylvain Fadat founded Domaine d’Aupilhac at Montpeyroux with a first vintage in 1989, beginning with five hectares in the Aupilhac vineyard. His wife, Désirée, later joined the domaine full-time, continuing a family history of local vine growing. Two contrasting landscapes shape the work: the south-facing limestone, marl and clay of Aupilhac, and the cooler Cocalières amphitheatre at roughly 350 metres.

The estate is certified organic by Ecocert and biodynamic by Demeter. Grapes are harvested by hand, each variety ferments separately with native yeasts, and the wines are bottled by gravity.

Cherry, raspberry and blackberry lead the documented fruit profile, joined by savoury herbs. The palate is medium-full and juicy, with a mineral backbone. A second exact record describes the wine as robust, fruity and refreshing, with fullness, silky tannins and a spicy finish. Cinsault and Grenache are the two varieties consistently supported by the retained exact-vintage evidence.
