Crossbarn by Paul Hobbs

Paul Hobbs founded Crossbarn in 2000, naming it after the cross barn on his family’s farm in western New York. As a child, tasting the same apple variety from different orchards had shown him how much the growing site could influence the fruit. Today the winery occupies a former apple-processing facility in Sebastopol, California.

Grapes are harvested by hand at night, sorted by berry or cluster, and fermented separately by vineyard; ageing uses stainless steel and a small proportion of new oak. Chardonnay and Pinot Noir come from cool Sonoma Coast sites, while Cabernet Sauvignon draws on Sonoma County and Napa Valley.
