AboutCotswolds Distillery
Cotswolds Distillery began with New Yorker Dan Szor, who left a finance career in London after moving his family to the Cotswolds and seeing an opportunity in the barley fields around his home. He converted a derelict site near Stourton, assembled a distilling team and opened the doors in July 2014. Gin came first, after trials of more than sixty recipes; the first single malt followed in 2017.
The Dry Gin is made from wheat spirit in Dolly, a 500-litre copper pot still, with botanicals including local lavender, fresh pink grapefruit, lime and juniper. It is bottled without chill filtration, retaining botanical oils that turn the gin pearlescent when ice or tonic is added.

Juniper leads with bright pink grapefruit and lime zest, followed by a gentle floral note from local lavender. Coriander, angelica and bay give the palate an herbal backbone, while cardamom and black pepper add restrained spice. The texture is aromatic and concentrated rather than heavy. A clean, citrus-led finish leaves juniper, lavender and fresh peel in a crisp, balanced line.
