Corralejo

Corralejo makes tequila at Hacienda Corralejo in the highlands of Guanajuato, the estate where Miguel Hidalgo y Costilla was born. The distillery uses Blue Weber agave, grown primarily on estate fields, and slow-roasts it in clay ovens. Fermentation uses a house yeast, followed by double distillation in copper pot and column stills. The hacienda also has its own glass factory, where the bottles are made before being labelled by hand.
