AboutColección de Toneles Centenarios

When the old Ferrero winery in Cañada closed in the 1960s, its barrel room was left undisturbed. Twenty-five barrels from the late nineteenth and early twentieth centuries survived there, holding old wines that were recovered in 2015. Winemaker David Carbonell and the Ballester and Ferrero families brought the cellar back to work, forming Colección de Toneles Centenarios in 2019.

They also farm old, dry-grown bush vines around Cañada, including Monastrell, Arcos, Giró, Tortosí and Verdil. The bodega makes Fondillón from Monastrell, ageing it in the recovered oak and bottling it under the Luis XIV name.

Colección de Toneles Centenarios Luis XIV Red Vermouth

Spanish Fortified
$57.99
Light mahogany in colour, with expressive wild herbs, anise and sweet spice layered over ripe red fruit. The palate is rounded and medium-sweet, with cinnamon warmth and a fine bitter edge bringing balance through a long, composed finish. Serve well chilled over ice with an orange twist, or use in a Negroni or Manhattan; olives, salted almonds and charcuterie make straightforward aperitif pairings.
