Canadian founders Mark Convery and Av Grewal launched CoCo in 2019, bringing their coconut-water cocktails to a wider Canadian and American audience in 2020. In the early years the team stayed small, with Convery directly responsible for production as well as design and marketing. The drinks combine coconut water with vodka or rum and sparkling water, using spirits rather than a malt-alcohol base.

Real coconut water gives the palate a fresh, lightly tropical character, supported by a clean base of triple-distilled vodka. Sparkling water adds lift and keeps the texture crisp, while softly toasted coconut notes lend a rounded aromatic finish.
