Château de Bligny

Light gold, with fine, persistent bubbles and aromas of stewed white fruit, crystallized lemon and spring flowers. A subtle saline note gives the nose lift. The palate is fresh, lively and structured, bringing almond, nougatine and brioche into a dense but precise frame. A taut mineral finish leaves a lingering caramelized-nut note. Serve with scallops or roast chicken.
