AboutChampagne Pierre Paillard

The Paillard family settled in Bouzy in the eighteenth century, acquiring vines there around 1768. Brothers Antoine and Quentin, the eighth generation, now lead the estate, whose historic eleven hectares lie in this south-facing Grand Cru village. Pinot Noir and Chardonnay grow on Bouzy’s chalky soils.

Since 2016, the brothers have pursued organic conversion, lower yields and riper fruit. In the cellar, native yeasts, sparing use of sulphur and barrel ageing on fine lees are followed by natural clarification without fining or filtration. The Champagnes then spend three to ten years in chalk cellars.

Champagne Pierre Paillard NV Les Parcelles Bouzy Grand Cru Extra Brut

French Sparkling
$114.99

White cherry, wild strawberry and red apple lead into toasted brioche, meringue and fresh dough. The palate is broad yet finely driven, with bright acidity, chalky minerality and a generous core of pure red fruit. Dry and inviting, it closes with clarity and length. Serve with oysters, crab, lobster, fried chicken or a nutty aged cheese.
