Calcarius
Calcarius 2019 Hellen Rosso
Italian Red
Mulberry, bright red fruit and forest notes meet a stony, saline mineral line. Nero di Troia grown over limestone near the Adriatic is fermented spontaneously in open steel with a short period on skins, then rests in steel. The palate is fresh and direct, with moderate weight, lively acidity and fine, granular tannin. Serve lightly cool with tomato-based pasta, grilled vegetables, sausages or roast pork.
Calcarius 2019 Hellen Bianco
Italian White
Falanghina grows on white Kimmeridgian limestone soils in the Gargano area of Puglia. The grapes are harvested by hand, destemmed and fermented spontaneously in stainless steel, then mature for six months in tank. Bottling is unfined and unfiltered, with a small sulphur addition. The profile is saline, with ripe cedar, chalk, citrus bitterness and a honeyed finish. Alcohol is 11%.
Calcarius 2019 Soul Glou Primitivo
Italian Red
Pomegranate, blood orange and summer herbs accompany wild berries, strawberry and balsamic notes, with a lightly tannic, crunchy finish. The Primitivo is hand-harvested and left in whole bunches for carbonic fermentation in sealed stainless steel. After two days on skins, the fruit is basket-pressed. Maturation lasts six months in stainless steel before unfined and unfiltered bottling with a small sulphur addition.
Calcarius NV Frecciabomb Orange Pét-Nat
Italian Sparkling
Cloudy amber-gold with a lively, gentle fizz. Ripe pineapple and lemon zest lead, followed by wildflower honey and a faint Mediterranean-herb note. The palate balances a lightly grippy skin-contact texture with bright acidity, keeping the fruit energetic and dry. Serve well chilled with burrata, fried seafood, spicy dishes or a generous plate of antipasti.
