AboutBlind Enthusiasm Brewing Company
Greg Zeschuk founded Edmonton’s Blind Enthusiasm after his career at the video-game studio BioWare. The brewery now focuses on The Monolith, a facility built for spontaneous and mixed fermentation that began brewing in 2018.
Drawing on Belgian lambic methods, its brewers use aged hops and a coolship, with Edmonton air starting fermentation in spontaneously fermented beers. Barrel fermentation lasts one to four years. Some blends are finished in spirit casks, dry-hopped or fermented again with Canadian fruit before conditioning in bottle.
Blind Enthusiasm Spontaneous Manifesto
Bright and vinous, this spontaneous-fermentation blend layers stone fruit, crisp apple and juicy citrus with a gentle red-wine fruitiness and subtle tannin. The texture is rounded and generous, lifted by high carbonation before a dry, lingering finish. Serve well chilled with charcuterie, roast chicken, firm cheese or simply as a distinctive aperitif for curious wine and beer drinkers.
