Billaud-Simon
Dating from 1815 Billaud-Simon has been one of the great domaines of Chablis. It was founded in 1815 by Charles Louis Noël Billaud upon his return from the Napoleonic Wars. He planted vines on his family holdings which were later expanded through the marriage of his relative Jean Billaud to Renée Simon in the 1930s. Today, Billaud-Simon’s premier and grand Cru bottlings are in the very top echelon of the region.

White flowers and citrus blossom meet ripe lemon, apple and peach. Rich yet precise, the palate balances creamy breadth with bright acidity and a firm mineral core. Honey, flint and a cool wet-stone note add savoury definition before a long, saline finish. Excellent with crab, lobster or roast poultry.
Domaine Billaud-Simon 2013 Chablis Grand Cru Les Clos Chardonnay 750 mL
Mineral and honeyed notes lead into citrus and white stone fruit, with a restrained floral lift. The palate is broad, round and powerful, yet its weight is held in fine balance by clear freshness and a precise mineral line. The texture remains composed through the middle. The finish fades slowly and persists on citrus, pale fruit and a discreet savoury note.
Billaud-Simon 2021 Chablis Premier Cru Vaillons
White peach and delicate white flowers form a focused, finely drawn nose. The palate is vibrant and energetic, with bright citrus acidity and a cool mineral line giving the fruit clarity. Leaner than opulent, it gains measured texture through the middle and closes with a brisk, precise finish that suits oysters, grilled fish or simply prepared shellfish.

Fresh peach and citrus oil open with delicate floral notes and a cool oyster-shell edge. The palate is rounded and quietly powerful, balancing a fleshy core of fruit with ripe acidity and precise mineral tension. Creamy and elegant without losing focus, it carries citrus, stone and a lightly saline note through a long, composed finish.
Billaud-Simon 2020 Chablis Grand Cru Les Preuses
Light gold with subtle golden reflections, opening on mineral, creamy and floral notes with touches of honey, dried fruit and sea spray. The palate is direct and powerful, yet finely honed, with concentrated citrus held in balance by fresh acidity and a precise mineral line. The finish is pure, persistent and gently saline. Serve with oysters, roast halibut, crab or young Comté.
