The palate is rounded but fresh, with vanilla and gentle spice carried by a creamy texture; a lightly leathery note adds depth to the long, composed finish. Serve neat or with a few drops of water. Pair with roast chicken, smoked trout, aged cheddar or an apple tart that is not overly sweet.
