Baked apple, citrus and apricot open with fresh dough, beeswax, white flowers and a fine chalky edge. The palate is bright and fleshy, its ripe orchard fruit lifted by fresh acidity and a very fine mousse. Bone-dry and textural, it finishes clean and mineral, well suited to shellfish, roast poultry or aged cheese.
