Serve cool rather than ice-cold with aged Gouda, roast poultry, charcuterie or mushroom dishes.

Whole raspberries bring an intense, pure red-fruit character, layered over the tart, earthy complexity of traditional lambic. Extended maceration draws out vivid berry flavour and a gently tannic edge, while further fermentation in bottle keeps the palate dry and lively rather than sweet. The finish is bright, vinous and quietly funky. Serve well chilled with goat cheese, pâté, berry desserts or white chocolate.
