Yellow plum, yuzu and pomelo shape the aromas, while raspberry iced tea and boysenberry define the palate. This spritzy, low-alcohol fruit piquette combines freshly pressed Gewurztraminer and Foch pomace with Golden Delicious apple juice fermented on Pinot Noir skins. Empress plums mature for eighteen months in neutral oak, adding another fruit component to the finished drink.

Canadian Rosé
Red cherry, raspberry and strawberry accompany a light, bright profile with low tannins and refreshing acidity. Ortega and Foch are co-fermented from certified-organic fruit grown on the Saanich Peninsula. The grapes spend ten days on skins before pressing into stainless steel. The wine is bottled unfined and unfiltered, with only a trace of sulphur added. Production totalled 250 cases.
