Cabernet Libre

Cabernet Libre and Cayuga form a sparkling red with 10.1 percent alcohol. Raspberry, black pepper and blood orange appear in the profile. The wine comes from Vancouver Island, British Columbia, and is associated with Salt Spring Island. It belongs to Kathleen Sinclair’s personal project; she is a natural wine and cider maker whose earlier work included Bella Wines.

Bright red fruit and dark grape notes lead a softly sparkling, carbonic style with a juicy, gently creamy mouthfeel. Low tannin and modest acidity keep the palate relaxed and immediately drinkable, while a light savoury edge prevents it from feeling simple. Serve well chilled with charcuterie, pizza or grilled vegetables.
