La Mancha DO

Apricot pith, magnolia blossom, beeswax, flax and broken-stone notes are present in a savoury, stony profile. The wine is rich in texture rather than weight, with a slight mineral grip on the finish. Made entirely from Viognier under the La Mancha designation, it is organic and biodynamic. The grapes are harvested at night and cold-macerated before fermentation. Alcohol is 13 percent.

Bright yellow-green colour accompanies tropical fruit, herbs and notes of anise. The palate balances sweetness and acidity, with a rounded texture, long line and firm structure. Made entirely from Sauvignon Blanc under the La Mancha designation, the wine is classified as a young white and contains 13 percent alcohol. Suggested pairings include rice, fish and vegetables.
