The palate is rich and smooth, with Oloroso depth and Pedro Ximénez sweetness balanced by wormwood and a steadily drying herbal finish. Nutmeg, angelica and quinine add savoury complexity without overwhelming the fruit. Serve well chilled over ice with orange, or use it to bring sherry character to a Manhattan or Negroni-style cocktail.
