Horse Heaven Hills AVA

The profile includes citrus, crisp green apple, tropical fruit and a mineral finish. Candied lemon and pink grapefruit add further detail, while the texture is ripe and round. Made entirely from Sauvignon Blanc, the fruit comes from vineyards in Washington's Horse Heaven Hills and White Bluffs areas. The wine is made in British Columbia. Seafood, goat cheese and Caesar salad are suggested pairings.

Grapefruit, ripe lemon and green apple are joined by honeysuckle, peach and lime leaf. Guava and white pepper appear with a concentrated, long palate and a soft, creamy mouthfeel. Hand-harvested Sauvignon Blanc receives a four-hour dry-ice skin soak, then ferments in stainless steel and French oak puncheons before five months on lees with weekly stirring.
