Baked apple and tangy yellow fruit open with hints of fennel, ginger and fresh herbs. Crisp acidity gives the palate lift, while fine bubbles carry a broad, juicy orchard-fruit core. A light savoury edge and clean mineral tone add definition, leading to a dry, persistent finish that feels energetic, textured and quietly complex.
Domaine Rolet Crémant du Jura Blanc Brut NV
French Sparkling
Chardonnay makes up half the blend, with Savagnin and a combined portion of Pinot Noir, Trousseau and Poulsard. The grapes are harvested exclusively by hand and pressed as whole bunches. A second fermentation takes place in bottle, followed by at least twelve months on laths. Fine bubbles accompany white fruit, citrus and floral notes, with a lightly saline character and a taut finish.

Fine bubbles accompany fresh apple, lemon and brioche. The Chardonnay has freshness, a chalky texture, saline detail and a persistent finish. Fruit comes from twenty-five-year-old vines rooted in Lias marl and limestone near Sainte-Agnès. The site lies in Jura. Traditional-method production includes thirty months of lees ageing and zero dosage. The cuvée is made entirely from Chardonnay.

Redcurrant and raspberry rise with rose petals, toast and a gentle almond note. Fine bubbles give the palate an elegant, dry profile, carrying bright red fruit over crisp acidity and a subtle stony mineral edge. The finish is clean and persistent, leaving a restrained floral lift and enough savoury depth to keep the wine composed rather than overtly fruity.
