A blend of sixty percent Pinot Meunier, thirty percent Pinot Noir and ten percent Chardonnay includes thirty percent reserve wine. Fermentation takes place in stainless steel, with four years of lees ageing in bottle. Light toast, brioche, nuts, peach stone and red apple accompany fine bubbles. Dosage is six to eight grams per litre, and the finished wine is twelve percent alcohol.
