Black raspberry, black cherry, liquorice, cocoa, fresh herbs and crushed rock accompany savoury umami, sage, lavender and rosemary. The blend is fifty-five percent Grenache, thirty-two percent Mourvèdre and thirteen percent Syrah. Native-yeast fermentation includes fifteen percent whole clusters. Maturation lasts sixteen months in neutral French oak, and the wine is bottled unfined and unfiltered. Velvety tannins accompany a juicy fruit core and mouthwatering acidity.
