Roses, cherries and apple blossom lead a fragrant, rosé-coloured aperitif. The palate combines ripe red fruit with crabapple brightness, while blue spruce, white pine and willow bark add cool forest character and gentle bitterness. Yarrow brings a sweet citrus note, balanced by a fine astringency that keeps the sweetness composed. The finish is floral, fresh and quietly savoury. Serve chilled on its own, over a large cube, or use it as the aromatic centre of a wet Martini.
