The palate is velvety and rich, balancing sweet cooked agave with tart citrus, tropical fruit, nuts and fresh herbs. Mineral acidity gives the texture definition, while a gently funky edge adds character without overwhelming the fruit. The finish is long, layered and savoury. Serve neat in a small glass.
