Brettanomyces-led fermentation adds rustic complexity, while extended contact with whole fruit keeps the peach flavour integrated rather than superficial. The finish is tart, dry and refreshing, with fruit and fermentation in clear balance. Serve cool with roast pork, washed-rind cheese, grilled chicken or peach salad.
