A layered blend of mixed-culture saisons brings together cherries, apricots and raspberries, each conditioned separately on locally sourced whole fruit before blending. One to three years in barrel gives the beer a composed, mature framework, with red fruit, stone fruit and oak moving together rather than competing. Gently tart and quietly complex, it suits slow sipping. Serve cool with washed-rind cheese, pate, roast duck or fruit tart.
