Plum-led and complex, this barrel-aged sour combines fruit from the brewery’s farm with mature mixed-culture foeder beer. Blackberry and pomegranate bring further dark-fruit depth, working around a measured sweet-sour balance rather than simple sharpness. The palate remains layered and composed. Serve cool with roast duck, grilled pork, goat cheese, charcuterie, berry desserts or dark chocolate.
