A complex blend of lambics from different years brings lively acidity and restrained fruit to a dry, persistent finish. Delicate wood notes reflect maturation in oak, while natural secondary fermentation gives the beer its measured sparkle. The character continues to evolve in bottle over time. Serve cool with aged cheese, mussels, roast poultry, charcuterie or mushroom dishes.
