Two barrel-fermented and aged saison bases come together here, one built around malted spelt and the other malted rye. Amarillo and Cascade hops add measured citrus and floral detail, while a final dry hop with Czech Saaz brings a fine herbal edge. The palate is grain-led, dry and quietly complex, with oak and farmhouse fermentation held in balance. Serve cool with roast chicken, aged cheese or mushroom dishes.
