British Columbia-grown malted barley gives the whisky a clear grain-led core and a distinctive peppery sweetness. Dark fruit and tobacco add depth, while more than three years in former bourbon barrels bring caramel, vanilla and a measured layer of oak. The palate is rounded and confident, balancing dried-fruit richness with gentle spice and toasted wood. A long, warming finish leaves toffee, dark chocolate and malt behind. Serve neat or add a few drops of water to open the sweeter notes.
