A mossy, meadow-like aroma opens with sweet earth and savoury maple. Porcini brings a deep woodland and umami character, while candy cap mushrooms contribute naturally maple-like sweetness. The rich palate adds toasted almond, butter, dark brown sugar and burnt caramel around the earthy core, creating an unusual balance of savoury and sweet. The finish is long, nutty and gently smoky. Serve neat and allow it time to open, or use in a restrained Sazerac-style drink where the mushroom character can remain distinct.
