Bright cereal and gentle fruit lead a composed, approachable profile, with the locally grown barley retaining a clear voice through the cask influence. Maturation in former bourbon, red-wine and beer casks brings rounded sweetness, subtle fruit and a lightly coastal edge without overwhelming the malt. The palate is balanced and easy-moving, with enough depth to reward a slow pour while remaining fresh and direct. The finish is clean, softly warming and grain-led, with restrained oak lingering behind.

About Fermentorium Distilling
Fermentorium Distilling has been producing spirits in Victoria, British Columbia, since 2014. It works with Old George, a restored copper still built in the 1920s.
Its Sanctuary single malts begin with British Columbia barley, malted, mashed, fermented and distilled on site. Maturation draws on former bourbon, wine and Phillips beer casks.
