Organic, hull-less unmalted barley grown in Armstrong, British Columbia forms the base of this small-batch Canadian whiskey. Triple distillation in a hand-made copper pot still keeps the grain character focused, while the single Bordeaux cask places maturation at the centre of the release. Eight years in the making, it offers a distinctive wine-cask counterpoint to the distillery’s bourbon-barrel TRUST expression. Pour neat and give it time in the glass, adding a few drops of water if desired.
