Whole Niagara-grown Montmorency cherries, stones and all, macerate in native-yeast cider for five months. The result is intensely cherry driven, with bright sour fruit, firm, grippy tannin and a distinctive sweet-almond note from the stones. Dry and sharply refreshing, it has the structure to work well at the table. Serve chilled with duck, charcuterie, washed-rind cheese or dark chocolate.
