Gala apple is fermented on crabapple pomace, drawing extra grip, freshness and orchard depth from the skins and pulp. Barrel ageing rounds the structure without muting the distinctive crabapple tannin. The result is dry, layered and serious, with a firm line through the finish. Serve lightly chilled with roast pork, aged cheddar, charcuterie or mushroom dishes.
