Green pepper, fresh herbs and cucumber open with chalk, white pepper and a light saline note. The palate is savoury and vivid, bringing sweet agave into balance with citrus, aloe and earthy minerality. An above-ground oven keeps overt smoke in the background. The finish is crisp and persistent, leaving jalapeño, roasted corn, oregano, cumin and clean vegetal freshness.
