Fruit aromatics open with delicate sweetness in a sake made from Yamada-Nishiki rice. The grains are polished to forty-five percent of their original size. Smooth and fragrant on the palate, it carries a flavourful mouthfeel before a refreshing finish. The profile brings delicate sweetness together with clear fruit character, joining aromatic lift, soft texture and a fresh close.

About Dassai
Dassai is a sake brewery in Yamaguchi whose history dates to 1910. Its name evokes a “festival of otters”, an expression from local history. Brewing centres on Yamada-Nishiki rice and careful polishing. Instead of relying on a single master brewer, the brewery shares responsibility across a team, combining measurement with skilled hands-on work throughout production.
