Green apple, quince and other white fruits lead this lively Mauzac, carried by fine bubbles and bright acidity. The palate is fresh, lightly savoury and gently sparkling, with a clean mineral line and a crisp finish. Made in Gaillac’s ancestral-method tradition, it is best served chilled as an aperitif or with fruit-led desserts.

About Domaine Gayrard
Domaine Gayrard sits on a limestone plateau near Cordes-sur-Ciel. Maurice Gayrard began bottling the family's wine in the 1950s, before the vineyards gave way to cereal farming for roughly thirty years. Pierre Gayrard returned to vines in 2013, rebuilding the domaine around twelve hectares and the native varieties of Gaillac.
The shift to organic farming began in 2016, followed by biodynamic practices in 2019. The grapes are harvested by hand. Fermentations begin with indigenous yeasts, and the cellar uses concrete vats, amphorae and barrels.
