The palate brings concentrated flavour with poised vinosity, gentle toast and a polished texture. Freshness and minerality carry the long, composed finish. Serve with crab, oysters or delicate white fish.

About Billecart-Salmon
Billecart-Salmon was founded in Mareuil-sur-Aÿ in 1818 by Nicolas François Billecart and Elisabeth Salmon, with Elisabeth's brother Louis responsible for winemaking. Seven generations later, the house remains independent and family-run, with Mathieu Roland-Billecart representing the current generation.
In 1958, Jean Roland-Billecart took inspiration from brewing, introducing cold settling and longer fermentation at lower temperatures. Wines from different villages and grape varieties are fermented separately in small temperature-controlled tanks before blending. Selected wines also spend time in oak, in cellars holding hundreds of small barrels alongside large wooden casks.
