Floral aromas from khorasan and spelt lead into a concentrated core of warm spice, honey and baked apple. Emmer brings depth and structure, while molasses and caramel add measured richness. A touch of barley introduces a graham-cracker note and helps lengthen the palate. The finish is smooth and persistent, carrying spice, orchard fruit and gentle sweetness in a composed, quietly complex line.

Description
TRUST Ancient Grains is the creation of a new and unique blend of Spelt, Emmer, Khorasan, with a small addition of Barley grown in Armstrong, British Columbia. Bottled at 44% alc./vol. it displays a medium mahogany colour.
For (3) plus years it has aged in 200-litre once used Bourbon barrels to gain character, complexity and colour. Hints of vanilla and toast are captured from its brief stay in new American Oak barrels.

Located on Granville Island at the heart of Vancouver, The Liberty Distillery pays homage to old traditions, by fermenting and distilling onsite following exact recipes. They perfect each batch by meticulously controlling every step from the fermentation of our selected organic grains to the triple distillation process in their handmade copper stills.
The Liberty Distillery only uses 100% organic BC grain in all of their spirits.
