Springfield 2020 Met Ancienne Chardonnay
The Springfield Méthode Ancienne Chardonnay is special because it was made using ancient techniques rarely used in the New World: The fermentation takes place spontaneously with wild yeast in a combination of new and used French oak barrels. There is no fining or filtration. Thus, a wine of distinctive and classical character, it will develop slowly and is made to last a lifetime. Nuances of lime, cointreau and oranges – a big wine with classical character.

A more concentrated and expressive Chablis showing lifted aromas of lemon oil, ripe citrus, green apple, and white peach layered with crushed shell, flint, and subtle floral tones. The palate is structured and finely textured, with driving acidity, precise mineral tension, and a deeper core of orchard fruit balanced by a chalky, saline backbone. Long and focused on the finish, with persistent citrus zest, wet stone, and a refined, mouth-watering energy that signals excellent aging potential.
