Springfield 2020 Met Ancienne Chardonnay
The Springfield Méthode Ancienne Chardonnay is special because it was made using ancient techniques rarely used in the New World: The fermentation takes place spontaneously with wild yeast in a combination of new and used French oak barrels. There is no fining or filtration. Thus, a wine of distinctive and classical character, it will develop slowly and is made to last a lifetime. Nuances of lime, cointreau and oranges – a big wine with classical character.

Family-owned and certified organic since 2013. A seductive red, the nose offers enticing fruit-filled aromas. Look for plum and blackberry, savoury herb and subtle oak spice finishing with ripe tannins. Needs a bit of cellar time, but showing quite beautifully now!
Pelle 2019 Menetou- Salon Morogues
Made from several parcels in the village of Morogues. Practicing organic, soils are plowed and completely hand-harvested. Aged in a combo of 70% tank and 30% wood (foudres and used 400L barrels) and for 11 months.
A classic style that is released ready to drink. Quite aromatic on the nose with a rich and powerful palate, quite full bodied for a Sauvignon Blanc and makes a great alternative to Sancerre.
Pelle 2018 Salon Rouge Morogues
100% Pinot Noir grown on Kimmeridgian marl and limestone. Aged in a combo of 70% wood *Foudres and used 400L barrels) and 30% tank for 12 months.
The terroir of the village of Morogues combined with strict vineyard practices results in a beautiful Pinot that would not be out of place in a tasting of Volnays.
Aydie 2016/21 Pacherenc Du Vic Bilh Swee
A silvery yellow, this wine is perfectly brilliant and clear. Exotic fruits and honeyed notes on the nose, a combination of delicacy and strength. The lively attack on the palate is in complete balance with the rich, fat structure. The finish is a caress of citrus fruits and a long vanilla sweetness, typical of grapes dried on the vine. This sweet wine has enormous potential. To be drunk cold at 8° to 10°C and pairs perfectly with foie gras and cheeses.

100% Aglianico. “Outstanding example of what the Aglianico variety can deliver in the right hands. Ripe red cherry, orange peel and sweet herb aromas. Then rich, fresh and perfumed in the mouth, displaying outstanding cut and clarity to the vibrant red berry and blue fruit flavors. Finishes with a dusting of minerals and botanical herbs. Still very young and will age well.”

The nose is rich and intricate, revealing a plethora of aromatic nuances that are beautifully balanced. On the palate, the wine is vibrant and exudes great elegance, with a remarkable integration of oak and a diverse range of flavors. It concludes with a lingering and satisfyingly long aftertaste.
Chatelet 2018 Moulin A Vent
A bold and structured Cru Beaujolais, offering aromas of dark cherries, ripe plums, and blackberries, with earthy undertones of forest floor and spices like black pepper and cloves. On the palate, it delivers rich dark fruit flavors, firm tannins, and a robust, mineral-driven backbone, balanced by refreshing acidity. The wine has a long, lingering finish with hints of spice and savory herbs, making it a complex and age-worthy expression of Gamay.
Springfield 2016 Meth Ancienne Cabernet
Thirty-five years ago, Springfeld cleared a 2.8-hectare triangle of land previously ignored because it was not ‘good’ enough - "too rocky and too steep".
Cabernet Sauvignon was planted, struggling at first with virtually no soil. The miracle was in the fruit: tiny berries – intense in colour and flavour, this meagre crop was vinified in the traditional way. No crushing of berries, native yeast only, no fining and no filters.
Wine was made with little intervention and kept for two years in new French barriques. After three more years of maturation in bottle, Springfield releases their top wine. It is a piece of their history, their passion and labour. It is their finest expression of Cabernet Sauvignon, and will age effortlessly for another two decades.

Aged 5 years with 2 years in oak, this wine bursts with concentrated black fruit and spice aromas. Enjoy a robust body, polished tannins, and a long finish. Hand-selected from the 'Pradolagar estate,' it's a blend of Tempranillo, Garnacha, and Mazuelo.
Perfect with a leafy salad, chicken and especially with seared duck breast.
